Sauvaget / 200g / Goat/Raw/Animal Rennet / Soft natural  / Deux-sevres / 25% fat

Its paste is fine, it somewhat melts in mouth. Milky, buttery and lactic when young. It ages tremendously well, its paste tightens, its flavours deepen, it becomes nuttier with notes of undergrowth and somewhat spicy after a minute in mouth.

Our sauvagets are sold at a rather young and tender age of 6 weeks old, not too old, not too goaty, it can be kept happily at home for another 6 weeks and more depending of the ripening you desire.

Choose a white one for a natural geotrichum coat with an ever so slightly milder taste or a cendré ( ash coated ) for a more cave. Bear in mind the difference will be quite subtle at 6 weeks old!

It goes well with a Sauvignon blanc.
